Ingredients
- 2 cups grated zucchini, drained
- 2 eggs, beaten
- ½ cup all-purpose flour
- 1 tbsp fresh garlic, chopped
- ½ cup grated Parmesan cheese
- ½ cup cheddar cheese, shredded
- ¼ cup onion, chopped
- ¼ cup scallions, chopped
- ¼ tsp baking powder
- Pinch of salt to taste
Directions
- Preheat oven to 350 degrees.
- Place zucchini, eggs, flour, Parmesan cheese, cheddar cheese, scallions, garlic, onion, and salt in a medium bowl; stir until well combined.
- Add the baking powder and stir in well and combine. Make sure the mixture is firm and not wet, if needed add a little more flour.
- Spray a sheet pan with nonstick cooking spray. Scoop 2 oz portions on to the sheet pan, keep an inch in between each scoop.
- Bake in the oven for 350 degrees for 15 minutes and then turn over and bake for an additional 10 minutes or until golden brown.
- Take out of the oven, let cool and enjoy!
