Cooking meals together as a family is a great way to bond in a fun and educational way. Children of all ages can join their parents in creating meals by choosing side dishes, helping with mixing and preparation. Parents can use this opportunity to demonstrate how fruits and veggies can be incorporated to make a meal healthier and tastier.
Here is an easy recipe to make a pizza Caprese for a lunch or snack. Get creative by using a bagel, thin flatbread or any bread slice for the “crust.” You can even incorporate your favorite veggies as topping options for an extra serving of veggies.
Pizza Caprese
Ingredients:
1 bagel, thin flatbread or any bread, sliced
1 oz. fresh part-skim mozzarella cheese, shredded
2-3 cherry tomatoes or any other tomato, sliced
1 tbsp. pizza sauce or spaghetti sauce
Instructions:
Preheat oven to 400-425 degrees. Line a baking sheet with aluminum foil. Arrange bagel halves, flatbread or bread slice on a baking sheet. Spoon pizza sauce or spaghetti sauce over each bagel or bread slice. Sprinkle with mozzarella cheese on top. Place tomato slices on each bagel or bread slice. You may use more tomatoes or fresh veggies for a variety of toppings.
Bake for 5 minutes or until cheese is evenly melted. Carefully remove from the oven using long tongs. Let cool for 1 minute. Serve and enjoy.
