Gazpacho is a cold soup traditionally made with blended fresh tomatoes, cucumbers, red onion, and garlic. For this version, we're adding watermelon some extra nutrition and flavor!
Ingredients
- 4 cups seedless watermelon, diced (save some for garnish)
- 1 seedless English cucumber
- 2 celery stalks, diced
- 4 vine ripe Roma tomatoes
- 1 small red onion, chopped
- 1 red bell pepper, diced
- 1 garlic clove
- 8 sprigs of basil leaves
- 1/4 green onion chopped
- 3-4 tsp sherry vinegar
- 4-5 tbsp extra virgin olive oil
- Pinch of Kosher salt and black pepper to taste
Directions
- Take the fruit & vegetables, wash and pat dry.
- Cut the watermelon, cucumber, and tomatoes. Set aside 3-4 cubes of watermelon, a couple of celery pieces, and a few leaves of basil to use as a garnish for the soup.
- Put the remaining ingredients into a blender (if you run out of room, blend the vegetables for a few seconds to make more space for the other ingredients). Pulse until it reaches a soup-like consistency. Taste and adjust seasoning, if necessary.
- Chill in the fridge for 2 to 3 hours before serving.
- Finely chop the reserved watermelon, celery and basil to place on top of soup. Enjoy!
